Same simple coffee rub:
Equal parts of sea salt, course black pepper, coffee of choice Make straps about 4"-5" long Dry with towel, get real dry put a few drops of olive oil in hand and wipe backstrap down CAKE on the rub mixture Wrap with bacon (this is only for protection from grill, and to activate coffee with fat) Look at my other backstrap recipe for my bacon lacing tech....only use one toothpick....and looks better ![]() Over HOT coles, cook 7 min per side, flipping ONCE. Let rest for 5-10 min and slice 1/8" thick This is one of the best rubs of any kind I have ever ate, Enjoy |

No "coffee" taste to me, and i drink a lot of coffee.
Really highlights the pepper to me, and adds some caramel flavor. I use dunkin donuts dark .....but have used folgers with great results too |

I've had all different types of grilled venison. I just tried this today and it is THE BEST I've ever eaten. I added a little Tony's, but probably not necessary. Wow!

I will say that I am very fussy about the preparation of my venison. I did however try this recipe the other night and must say it was FANTASTIC.... My wife and 17 year old daughter can't stop talking about how good it was either.
I did add to the rub a good dash of garlic powder. I made a blackberry reduction sauce with some sugar and butter and some grilled garlic and butter fresh green beans. Off the hook guys.... As Lowfence said there is zero coffee taste. As low |

I use coffee in my brisket rub every time. Think it adds a great edge. 1 part coffee, 2 parts kosher salt, 2 parts coarse black pepper and about 1/2 a part garlic powder.
