duck gumbo

We made duck gumbo last night from DU newletter and it was great, best I ever had, you can't tell its duck. If you like gumbo give this a try. Let me know if you need recipe and will try to copy and paste it. It make 12-14 serving so we 1/2 everything for just the 2 of us, we use Pabalos instead of bell peppers, they don't like me.

For those who don't have any duck in the freezer I recently substituted dove breasts for duck and it turned out really good!

We make Duck Gumbo every Christmas. Its a family tradition. That wild duck taste with a dark roux, cant beat it. Here is a link to my moms recipe. Just substitute duck for chicken. Ill have to get my brothers recipe, he makes a big thick gumbo.
