    Sandhill Crane - "Rib-eye in the Sky"?

    Shot my first sandhill crane this last weekend. I've heard mixed reviews on their delicacy, so I was eager to see if I could come away thinking they were a "rib-eye in the sky".

    I breasted the bird and kept the heart. Then I cleaned away all fat and silver.

    Next I got my grill up to about 400 degrees and grilled the heart and breasts to med-rare, about 2 mins on each side.

    It was me, my wife & 3 teenage boys for dinner so I knew they wouldn't go far enough as just steaks, thus fajita's it was. I let them set for about 5 minutes then thinly sliced them & placed em' in a hot skillet with fajita seasoning.

    After searing in the skillet for a few minutes, we prepared the fajita's.

    They turned out great. My wife, who's not a big fan of wild game, really loved it and said it was more like "filet mignon in the sky". It was really good!

                I thought about having some on Thanksgiving. These 3 were in my yard on Thanksgiving morning, good thing for them there is no Sandhill Crane season in east texas.

                  I drive through the rice parries north of El Cempo quite often and I'm seeing more and more every year.

                        Sandhill crane is excellent as long as it is not overcooked. You did it right only cooking to medium rare. This is true for ducks and geese as well. Nicely done.

                            Sandhill Cranes are typically quite delicious.

                            My favorite recipe involved slicing the breast in cuts about 0.75 thick. And, rotating brushed on honey and cayenne pepper. It's one of those tastes that is interesting. The honey hits your mouth first and is sweet, then about it time it hits the back of your throat the heat kicks in - it's scrumptious. I've also chicken fried them - and that is always quite good.
