Best way to eat the heart

Does it matter how I slice it? What prep work do I need to do? Trim the fat type stuff?

I always sliced the fat like stuff off the top and just kept slicing across the heart. I make my slices about a half inch. To me, heart is some of the best eating on an animal.

I hate liver but love the heart. One is a filter and one a muscle. Different flavor and texture

Take the time to open it up to clean out vessels, valves, etc
Season and grille med rare with some fresh rosemary

Dust it in some flour and seasoning, toss it in a skillet, and mix it in with eggs for breakfast

Sweat down some onions in a healthy amount of butter, remove onions from pan then fry in the same pan.
