    Venison Ham

    I have a nice venison ham marinating (injected) and plan to slow cook it, with pecan wood. Really would like "fall off the bone" tender...any hints?

    sear it fast then wrap in foil to keep it from drying out. When you sear it you should be able to capture the smoke flavor. The moisture you keep by wrapping in foil will make it tender..
