A jack rabbit that is been slow cooked and braised is some amazing tasting stuff, and is better than most of the "pot roasts" I've eaten at eating establishments.

In the grand scheme of things, anything can be made to taste edible with the right coverage of spices, sauces and ingredients ie gumbos.....which doesn't mean its good, but the taste and texture can be covered up or masked with good tasting stuff.


Put me down for jackrabbits, diving ducks, mergansers, any corn rattlecan goats or rams and snowgeese....oh yeah....and nutria..

Goose was tough to eat. I've had some awesome duck though

I think goose is better than duck. And I like em both.

You may throw rocks at me but I will say West Texas Mule Deer. An old buck that has been eating sage and black brush is plane nasty. No amount of sprite, seven up, milk or buttermilk can mask the rank taste.

Hooded merganser and buffleheads May be worse than goats. Any of those fish eating birds are bad.
