Default 2 year old brisket in freezer

Found a brisket I bought about two years ago in freezer. Still in vacuum wrapped package and looks ok. Would you take a chance smoking it?

Absolutely! If it turns out no good, you can always throw it out or give it to the dogs, but honestly I don't think that's gonna happen.

I found some Deer steaks that were Vac sealed over 4y..and they were still good...and I would think a comercial Vac would be better than mine...COOK that Thang..

I just smoked one in February that had been in the freezer about 2 years and it was fine.

You have basically freeze dried aged it, no joke. Look it up and you will know what is meant.

If it is an HEB or major food supplier's brisket, it was also likely treated with a process called HPP pasturizing... If the packaging is not perforated and still sucked down tight to the meat, it will keep for years. The HPP process subjects the food to 80-100,000 psi for a short period of time. It is a non-heated way of "pasteurizing foods. The high pressure kills the bacteria... All HEB packaged meats are done that way as are their smoked briskets, bacon, etc. Saddler's Smokehouse is too, as are others... That brisket you have if it's one of those from an HPP processor will be in its prime for a good 2 years...

If it is still sealed your good. Vacuum seal is definitely good for two years.
