    Put the smack down on a good sized eater pig yesterday. Been craving some wild hog! Dropped everything off at the processor this morning but the straps. Gonna fire up the smoker this weekend and try my hand at it. Anybody have any recommendations or secrets they'd like to share for smoked back strap?

          Season with dry rub of choice (I use only Lawry's Season Salt and fresh ground black pepper), lay couple of strips of thick-sliced bacon on top, and stick on the smoker. After about hour and a half-2 hours, wrap in foil and cook another 4 hours. Enjoy.
