    Homemade sausage?

    My dad is getting a sausage stuffer attachment for his grinder this year for Christmas. I want to get him some casings and spice mixes. Any recommendations for a new comer to the practice would be greatly appreciated.

            Go to your local meat processor and order a half hank or a full hank casing pack depending on what you need. A hank does around 120 lbs of sausage. The LEM stuff you buy is on salt and takes 3 or for times the amount of waiting, and also the casings pop a lot more often. Play smart, not easy.

              I order my casings online. The Home Pack and LEM casings are short and usually full of holes.

                Casings they sell have been good.

                Lots of options at that site for sausage mixes, for breakfast smoked I have used the Old Plantation mix for years but I do add bit of black pepper. The Summer Sausage mix is a good start but I do like adding in whole mustard seed, peppercorns or course black pepper, Jalapenos, and sometimes high temp cheese.

                      REO German blend is **** good
                      The polish is also very good as well as the summer sausage seasoning

                        Got some seasoning, high temp cheese, and casings from Walton’s for my sausage this year. No complaints.
