    Tuna steak?

    A client of mine gave me a couple of packages of tuna steaks. I have never prepared this before and have only had it at a restaurant a few times. Just don't want to mess up and it notturn out. Also any ssuggestions on what to prepare with it.. thanks Mike

    Olive oil and dab of butter in a pan. I put peppercorns in the pan also. Get it good and hot
    On the tuna I add kosher salt, wasabi powder and sesame seeds.
    Cook each side about 90 seconds
    Gives it a nice seared finish and rare middle

      I use the same method above, super hot pan, very short time on each side (except i use sesame oil).

      You can sauce it with all sorts of things after: my favorite is to put a shallot and ginger cream sauce down on the platter then the steak and then drizzle a soy reduction over it.

      Or just dip slices straight in ponzu sauce.

        ditto sparkles and sir shovel above ... I'd generously coat in sesame seeds and cracked black peppercorn, sear, then slice and serve with Ponzu sauce
