                  I cured and smoked a belly a few months ago. I did one wet cure and one dry. The wet cured one was really good, but the dry cured one was too salty. Not sure why. I smoked em both for about 6hrs. Got my belly at HEB

                        Just the thin layer of skin. It will keep the cure from soaking in.

                                I have a question is there anything to substitute the pink cure? My wife is on a organic kick which is good, but could not find anything on how to substitute the pink cure that is organic? or do u even need it? I was wondering this to for making sausage?
