Default Processors---location and Reviews

Thought I would get this going. Last year I used Wesley Head in Goldthwaite. Had Jalapeno Sausage, hamburger, and season steaks. Was very satisfied. Prices were very reasonable and turnaround was quick. Also offers Cold storage for $10.00 a day if he has room. Will be using him from now on. Located on Hwy 84 East just out of town. We dropped some stuff off at new praseks in Sealy. I'll have a review shortly. I will say they were adamant about they process your deer and your deer only. I hope the convenience factor don't bite me in the rear.

Glad you posted this. I drive right by his place coming and going to the deer lease and have wondered how good it is. Knowing that he offers cold storage is even better. Thanks for the info.

My favorite 2 processors are Eddie Rays in Mcgregor and Hudson's in Austin. Eddie Ray's has the best smoked jap and cheese sausage as well as snack sticks. Hudson's fajita meat and bacon wrapped chopped steaks are awesome.

I've used Fischer's Meat Market in Muenster Tx several times over the years and they make great sausage.

They told me that anything that needs smoked, they send to Hillje and then shipped back to Sealy

I am taking my deer to Kovosovics in rosenberg again for summer sausage. I am also going to take some to Bellville meat market for some of the dirty rice sausage

Granzine's in New Braunfels for buck sticks and dried sausage for me. Used to use Dzuik's in Castroville but that's too far to drive for me.

Been a fan of Hudson's for many years. I had about 60 lbs ground last year. About 4 packages were awful. I know it's pot luck, but these were sub-par by their standards.

Had sausage and chop steaks made from a cow elk a few years ago and they was exceptional. Same with some axis sausage the season before.

I've been using CCR for over 20 years and no complaints. Started back when they were Syracuse and had their first shop in flower Mound. The jalapeņo cheese sausage is the bomb?

Just picked up the first load of the season yesterday from Hudson's in Austin. Great people, price is tolerable and results are consistent. And you get the bonus of checking out the freak show that is South Congress!!

I've never taken a deer to a processor, might try Hudson's since it is the closest to me. How exactly does it work?

Morning kill take gutted deer to them right after field dress? Night kill take quarters to them in a cooler the next day?

Pretty much. We take almost everything quartered to save a couple bucks and because I like to let them drain a day or two.

My Kitchen... jerky smoke rings dried sausage chop steaks very similar to kleins burger and steaks. Never had a bad run and the price is right.

That said I have had product from Rhodes and Bernhardt both were good and I would use them if I needed too

I usually take mine to Miiler's in Llano. Other than being an aggie, Bryan is a great guy and the results are great. If it is cold enough to not be in a hurry, I will take one to Hudson's every year or so. Great stuff and hippies and hipsters alike may weep at the bloody tailgate and carnage. I had a pedestrian call me a "F'ing Neanderthal" as I dropped one off a couple years ago--made my day.

I tried them and weren't too impressed with the link sausage. It was very fine ground hotdog like consistency. I prefer the course ground German type sausage. They probably can do both I just didn't know I had to ask for it. Summer sausage was ok. The rest was good with no complaints. I want to try their venison tamales but haven't yet.

I will second this. Dan and his family are good people and will do you a good job. The meat sticks are the bomb and his tamales are really good.

It's also pretty convenient that he's only about two miles from me.

I've been using Shannons Processing and Taxidermy in Cherokee, TX. I can say hands down he's been the best one I've ever used. He makes these awesome things called "Antelope Eggs." They are ground up venison, jalapeņos, and a high melt cheese with bacon wrapped around the outside. These are unbelievable. He also has great summer sausage, filets wrapped with bacon, and a bunch of other excellent stuff. The best thing about it is the turn around, he gets your stuff in and out quick. I highly recommend him.

Lmao. I buy a bunch of stuff from Millers. Really quality stuff. The pepperjack Llano links are the bomb!! Lol. And those wakauyshi or however you spell it steaks are amazing too!!

For folks traveling up and down Hwy 287 from metroplex to Vernon area, Whitakers in Iowa Park is really good. Nice people, fast turnaround, quality product(s). Easy on and off 287 on west side of Iowa Park.

I do want to try Hudson's for their bacon wrapped chop steak and fajita meat. So can I just bring in a couple quarters and just ask for those two products? Heard your going to pay there too but how much? Thanks for all the reccomendations y'all put up.

Hirsch's Meats, Plano. The half star is location, if you are in N. Dallas its a no brainer and beats driving out to Cinnamon Creek. Buy some stuff pork chops while you are there. You are welcome. FYI they only take skinned animals, so quarter before you go.

There was a guy processing in Ozona a few years ago. Not sure if he quit or not. Barn behind his house in a residential area. Did pretty good work but a pain in the butt to get to if late in the season.

Apache Meat Market, Del Rio. It's really hit or miss. Sometimes it's great, sometimes not so much. Not always sure I was eating the deer I shot. But when it's 95*, and I'm driving home on 90... However since Klein's has an after hours cooler drop, I'd rather spend $50 on ice to make it another 3 hours down the road. This one gets a solid "meh, I'd use them in a pinch..."
