              Perfect.

              I really wish it didn't, but it bothers me to no end when I see people cooking/ordering their steaks (especially wild game) anything past medium.

                  I do mine over high heat for about 2.5 minutes per side. I add a dash of lemon pepper along with my other seasoning. Taste great.

                                Let it get to room temperature before grilling, this does 2 things. 1: makes it cook even and 2: the center will be warm
