    Perfect, juicy tender smoked turkey breast everytime

    I have been encouraged to share this recipe by family and friends because they say it's AMAZING. And, it really kind of is. So here ya go.

    Get a bone in turkey breast
    Remove the skin
    carefully debone
    BRINE- over night or for as long as you can. I use apple juice, kosher salt, sugar and maybe a little BBQ sauce if you like.

    Remove from brine. Apply rub liberally- I use HillBilly Mojo Black. This stuff is amazing and is made from smoked salt and some other stuff. It's really different. you can find it in a few stores around Austin otherwise on line at http://www.HillBillyMojo.com

    Apply rub and put in smoke for about an hour or untill it starts to look dry and forming a crust.

    Pull it from the smoker and lay it on foil. Put butter pads on, around, in, under and wrap it in foil.

    Put it back in the smoker with a temp probe inserted. At 160 internal pull it out and let rest while wrapped for about 20 minutes.

    slice thinly and enjoy. It's great hot or cold. Absolutely amazing.

                          I have been wanting to try it on a wild bird. It would probably be great. My place between Rocksprings and Del Rio used to be loaded with turkeys. I don't know what happened, but we havens seen or heard a turkey in over 2 years. Also, pork loin cooks exactly the same way and comes out awesome.

                            I’d bet my bottom dollar that a wild turkey breast will not be as good as the store bought one!
