    I am excited about my smoker today Pork and Banana leaves

    I've never tried this one but I am excited. later we are going to do some papaya rice and pineapple soaked in fireball whiskey on the grill.

    So far I learned that you have to tie the banana leaves at 90 degees from the grain or they will split super easy.

    1tsp kosher salt 1/2tsp smoked salt 1/2tsp paprika
    Fresh banana leaves, thanks Amazon
    on the Weber / Smokenator with mesquite 225 degrees all day long...

                  Getting closer 160 I am thinking I am going to pull it just over 200. More charcoal and water added to the pan

                            yes, The leaves will filter most of the carbon out, but will allow a beautiful rose colored smoke ring. The flavor is amazing. This is common practice for whole hog cooking in island communities.
