I helped a friend of mine make sausage saturday. Here's some pictures of his smoke house. We put it together, smoked the sausage and had it torn down and put back up in about 3 hours.

I helped DirtyMike make sausage three weeks ago. Here's his smoke house he made using scrap 2X4's and fence boards....mostly.

Well done sir. Built our smokehouse 2 years ago. 6x6x10. Cool thing is that the base is on a "floating slab", so we can actually move the entire house, intact. Only moved it once, but it worked like a charm.

So a question I've got. If I wanted to try making the sausage and but don't have a smokehouse. Would you have similar results by just bagging when made and tossing on a smoker like a brisket, I know it won't take too long to cook, but it would still get some smoke, correct? Wouldn't need the cure either would you?

yes...that would be fine for a make it, smoke it til done and eat it....but if you want to make a lot that way and freeze it, you would would be basically freezing leftovers...

Would just smoke as I needed, no putting a bunch away - I agree on leftovers. I figured it would be ok, just didn't know if there were other reasons. Just sharing smoked ready to cook is easier for others to heat up I guess.

We are smoking to add flavor for a future cook....100-400lbs at a time. Smoking to cook and eat right now is fine in small quantities but the reheat is not as good as what we do cold smoking for future cooks.

Here you go pre-paint........buddy has one that is 2 foot and it works just fine as well. Mine is 36" and the grate and stack are removable for use with the smoke house.

I've been watching the weather too trying to pick a weekend to get er done. I'm going to try out the pretubed casings you've been recommending. I think they should make the process go a little smoother.

Awesome job. Can you post your pork/venison ratio? Pork fat or butts? I made some snack sticks and they came out way too greasy

60 pork butts 40 deer on link... 50/50 on snack sticks.

Got mine basically done. Also built a really nice firebox. With all the wind it looks like the smoker will need to be skirted. Started a for today to season the firebox to get it ready for some sausage in a few weeks.
