    Nilgai ribs

    Was gifted some huge ribs today and have no idea how to cook them. Is the fat nasty like a whitetail or can I leave it? Smoker or oven?

    Well no help from the brain trust so I just got as much fat and membrane off as I possibly could and dusted them with my normal rib rub. On low and slow now.

      Darn! The fat is NOT nasty, by you typically trim fat from ribs anyway. You're gonna love that meat!

          Dang it those are going to be Great! All the nilgai we've shot and we never thought to keep the ribs. I will from now on.

                  Edit: my bro cooked a rack as well and he brined but the smell and flavor was much the same - like mutton. Is that common for Nilgai?

                            Never thought to cook up the fajitas, but I have tried the ribs on a couple occasions. Never could get them to taste very good. Haven't tried the crock pot yet, but maybe next time I will. Those fajitas look great by the way.

                              It’s funny, it seems every time I google how to do something, anything with game meat TBH is always the first to come up. In this case, this thread is the only thing at all that came up on nilgai ribs!

                              I’m almost done processing my nilgai, and the ribs are one of the last things I need to take care of. The guide sawed them off at the spine so I have both full slabs. They are probably triple the width of any vacuum sealer bag. Should I just cut them do to size with a saw? Any other suggestions before I get to hacking???
