    BNZA Gator - Sugar Cane Molasses, Mango, Habanero marinade

    Here is the marinade and dipping sauce I used for the smoked Alligator shish kabobs at BNZA

    Marinade recipe below is enough for 2 lbs. of meat. I suggest using 1/2 the mixture below as a marinade with meat in zip lok bags. The other 1/2 can be used to glaze the meat on the BBQ pit, or drizzle on top of meat once taken off pit.


    Mix all ingredients below and store leftovers in container , refrigerate for future use. You can also heat marinade in pan on stove top to thicken for other dishes. Excellent marinade for chicken, pork, beef, or any other ideas in the kitchen or backyard grill.


    Marinade ingredients :

    1/2 cup Sugar Cane Molasses or Steen's Syrup

    1/2 cup Mango juice or fresh Orange - Mango juice

    1 ounce fresh squeezed Lime juice

    2 ounces Apple Cider Vinegar

    4 Tablespoons Creole Mustard

    1 ounce Raspberry Vinaigrette dressing

    1/2 cup Ketchup

    3 small Garlic cloves, finely minced

    1 Habanero chile, seeded and minced ( or 1 Jalapeno pepper finely minced )

    1/2 teaspoon Orange zest

    1 sprig fresh Rosemary finely chopped

    1/8 teaspoon of Allspice

      Blake I dont see any BLAZE on that list

      The Gator was outstanding I loved this Marinade. Have you thought about throwing some Teriyaki sauce into this mix.

      Either way I can still taste that gator... Now I just need to place a order for some

                  Awesome stuff, Blake. I'm gonna cube up a small pig and give it a shot. I'm thinking about skewering it like the gator at nanza too.

                    another bump since I recv'd a few emails inquiring about the marinade recipe


                    this marinade can be stored in a container and refrigerated for future use.

                    don't be afraid to double or triple up on the recipe to make extra as it's that good
