Monday we will start in earnest with the assignments.

Get plenty of sleep, hydrate and rest up your livers.

GJ is going to purchase 75 racks of ribs at $2.99 (or less) per pund.

He expects that we will need donations around $450... easy peasy for a bunch of high rollers like us!

Of course, as always we need positive attitudes adjusted for early morning flurry followed by sit back and enjoy Nanza XI

I'm in for Table cover, tape, 2 tables, and one set of heavy gloves.

I'm also going to do a couple of pork butts up and bring them to put in a back corner and forget about. If nothing else we will have pulled pork tacos for dinner in the parking lot that night.

I used to think mesquite was too risky because of the potential for bitterness with green mesquite. However, a relatively new (to me) local BBQ place has me thinking we might try it.

How old and dried out is your mesquite?

I've had it since August but the guy I bought it from had let it dry. I've smoked a lot with it and never had any bitterness but I'm pretty new to smoking meat. It is all small logs very few split pieces. How much we need?

we need about 4 bags

we usually use hickory but sometimes do pecan... typically we do several different combinations of rubs and smoke so it's kind of a "whatever moves you at the moment and nobody objects" deal.

Bring it... if we don't use it, you can always take it home.

Guys - I would love to help out with Team Rib again this year, but with kids in tow, I won't make it to pit lighting or the initial prep and early work load this year.

Would you put up with me supplying cutting boards and knives and helping toward serving time?

TD there are a few of us that stay down at aggie land that team up and carpool for the lighting of the pits so that we can leave a vehicle back for the other half to come later.

I am going to workout something with Ron and I am sure we will have room.

I'm not seeing much that isn't already covered. I have a 6' table I can bring and some good, dry, split mesquite and pecan.

If that's covered too, I'll bring cash and a bottle of Patron.
