Default Chicken salad recipe

Looking for an easy, tasty chicken salad recipe. Yes I can Google but I want one you have tried and like. Thanks

I make mine pretty simple:

Mayo
Salt & pepper
Garlic Powder
Diced chicken breast
Chopped Parsley
Diced Purple Onion
Chopped Sundried tomatoes (use some of the oil too, it adds a good bit of flavor)
Very thinly sliced celery (paper thin)

I do it by taste, so I don't have measurements

I'll also add in lao gan ma chili crisp to mine for some heat and flavor, but most people don't have that (or know it exists).

Recently, my wife did something a bit different in the way she made chicken salad. Difference is in the way you process it. Doubt we’ll go back to old style.

rotisserie/roasted chicken, cooled and pulled.
1/2 Large white onion
4 stalks celery
Helmans mayo, 1 cup (more or less to your taste)
Freeze dried herb blend, Litehouse Salad herb blend (parsley, red onion, chives, shallots, garlic, dill)
Salt / pepper

Pulse chicken in food processor to your liking. We break ours down to medium crumbled consistency. Pour chicken in large bowl. Then process the onion and celery in food processor. Pulse it down fairly well, slightly liquid texture. Pour onion/celery over chicken. Add mayo, salt, pepper, and freeze dried herbs then mix to combine.

Flavors meld better when left to rest overnight in fridge. Attaching photo of herb blend. We found it on end cap of vegetable section at Winco and Sprouts.

Every time I run the smoker, I always smoke some chicken breasts(or whatever chicken we have in the freezer) for smoked chicken salad. We have grown fond of avocado smoked chicken salad around here.

Has anyone tried one with grapes, apple and nuts in it? A local fruit barn in town makes a superb chicken salad like this, they protect the recipe though

That's called a chicken Waldorf salad, in case you want to hunt for recipes. I like my chicken salad spicy, salty, and savory, so I don't put fruits (outside of tomatoes) in it. With a regular Waldorf salad (no chicken), I prefer it with a yogurt dressing instead of mayo, but if you're going to add chicken I'd keep the mayo.

Left over BBQ chicken 1/2 white meat 1/2 dark
Dukes mayo
pickle relish
green onion
course ground pepper
cajun seasoning
garlic powder

chop the chicken up really fine
I like lots of dukes mayo and pickle relish and use some of the juice
add onion and season to your taste

Mine is close to this except I add a lil mustard and substitute the pickle relish for diced pickled jalapenos.

Same here on the Dukes and relish. My MawMaw uses venison neck meat instead of chicken and it is to die for!

Rotisserie chicken
Mayo
Coarse ground mustard
Sweet relish
Few boiled eggs
Salt and pepper

All ingredients to taste and thickness consistency. I like mine pretty pasty with mayo and mustard and a lot of eggs. I don’t like it dry.

I noticed you use rotisserie chicken in your recipe. We have used that in the avocado one as well. It's just a base recipe, you can add or subtract as needed. I'm not sure we've made it the same time once

My wife makes a great chicken salad. She uses rotisserie chicken but changes it up. Sometimes she uses all mayo sometimes mayo/yogurt mix. She almost always uses some kind of fruit, Mostly grapes but sometimes apple or pineapple. Tiny pieces of pecans too.
