Both open. Sure you see 2 pins if you let yourself see 2 pins. Let your dominant eye take over from the beginning and it's like the "2nd pin" is not even there.
With both open, your field of view is much better, and I think this helps with some folks to keep pin on target until the arrow hits. With one eye closed, your view is cut in half. You now have an urge to open that eye at the shot, which might cause some slight movement at the release. Kind of like keep your head down through the swing in baseball/golf.
