These was the first batch of Borracho beans I made when I moved to Austin over five years ago. Good, Good stuff here. It was hatch green chili time when i made them and added a bunch of fresh roasted chili to it...Tongue slapped my face it was so good!!

Just started my first attempt. I didn't really read too carefully that the ingredients are added to taste, so it looks like I'll be having a few beans in my bacon!

I made a batch today and they turned out great! I did leave out the beer though as the other 3 times I made these that was most of what I could taste. Definitely better without it.

On a side note, is there a trick to get them not to stick? Ive burned a few to the bottom every attempt and I stir about every 15 minutes or so if not more.

Changed things up a bit by making these up in a crock pot last evening. Ran it on high for a few hours then added a second beer ... put it on low and crocked it over night. Came out great!

Ok, are you just soaking the beans in the clay pot, like over night, then cooking in a metal pot ? Or are you not letting them soak, and cooking in clay pot ? After seeing this just got to try it.

I'll give it a try...love good beans. My wife has the best recipe I've ever had and she won't tell me how she makes them. Just know they take all dang day. Imma have her cool this one up to compare

Love the pot. The one I use is prob over 20 yrs old and they do make all the difference.

No fill your pot a little past 1/2 way with water but watch the water level if using a regular metal pot because you might have to add more.

Looks like the first one doesn't come with a lid so I may get the other one it's a bit more but I guess because it has a lid and I'm not sure on that diffuser you usually cook beans pretty slow and low so I wouldn't think it necessary
