I added 75ml more everclear to one quart jar and it was a tad strong ! I'll be figuring out how much everclear to add to each quart until it tastes right. .... Gonna be an interesting week-end
I will be using a liter of Everclear when making it next time instead of 750ml

I can't make it. I end up sipping on it all before I can give it away as gifts! But it was an excellent Christmas time gift. Cheap but since you made it- it was still meaningful. And people love getting alcohol.

Great stuff! Made a batch yesterday using the 1liter bottle of Everclear, Martinellie juice. Wife thought it was excellent in her tea. Then had to sample more after dinner on the rocks. Brought a pint to a friend. He called me this AM and asked for more. Finished the pint last nite, said it really snuck up on him it was so good.
Will give a few more to my skeet shooting friends today.

Add the everclear to the same pot that the mixture of juices are in before pouring into jars. I have added a whole Ltr before and it's still good. Don't forget to add a little whipped cream to the top, apple pie with ice cream on top

I'm gonna get another bottle of Everclear and "fix up" a couple of the quarts !
Other than being weak, it tastes pretty good.

Had to give it a shot...not bad but was pretty dang sweet and didnt have as much cinnamon as id like...imma leave the sticks in for a few days and try it again. Was good mixed but too sweet for me straight. I do like the apple pie shine they market in stores and figure with a little tweaking it coukd be there in no time...anyone try ground cinnamon when putting in the sugar and brown sugar?

That was a waste of good shine. The recipe, broken down comes to, equal parts apple juice and cider and about 1/3 that in shine. Sounds to me you got it way too strong.

I dont like things real sweet but do enjoy a little different flavor every once in awhile. Shared with coworkers that have had the standard recipe and they preferred the stronger batch in a side by side taste test. I think women like the sweeter version though! mine was 50/50 shine to apple juice and cider.

Also I used fresh squeezed apple juice and homemade cider when making this so the flavor is a little different than using store bought juice!!!

Oh ok, I thought you'd gotten confused and made it like that by mistake. I bet it does have a nice kick to it too.

750ml Everclear

Mix all but the Everclear in a pot and heat till it's almost to a boil, to make sure the sugar desolves
Remove from heat and let cool. Add the bottle of Everclear and pour into Qt. jars and you're done.

PS, it's really good mixed with Vanilla ice cream too
wondering how this will turn out with Peach Cider.I stopped off on my way back home from Virginia this weekend at a Peach stand and bought a bussel off peachs and a Gallon of peach Cider. That stuff is Amazing! Will keep you up dated.I think i may switch it up alittle and minus the cinnamon stick and may go with some actual Shine not Everclear.

I'd mix a jar full of strawberries with ever clear. Leave for a few day. Pour liquid into another jar. Put a cup of sugar I'm with strawberries. Shake up and let stand in fridge for a few days. Pour liquid into jar of ever clear. Repeat 1-2 more times. Finishing buy pouring strawberries and all into ever clear and let sit 24-48 hrs then get happy.

I have a friend in Alabama that makes the apple version all the time. With some of it that he "ages" he will take a piece of oak (without the bark) and just brown it with a propane torch. Not black burnt like a whiskey barrel just browned to a golden color. He will put a good sized piece in each quart jar and let it sit in his cellar.

I have sampled both versions, the new batch vs the aged. I will say the the aged one is a much better product.

I got the urge to make some, for this weekend, but the stuff that Nilla let me have was WAY too sweet.

Has anyone cut the juice, cider, or sugars to make it less like apple juice and more like liquor?

I don't know how to add the Thread info but i pretty much followed this recipe for my Peach Cobbler Shine Thread.I only made 1/2 gallon of shine though but still used the same amount of liqueur and half the sugar and i used powdered cinnamon instead of sticks. But its all in my thread.Initially it was alittle stout....very stout but after refrigerating and sitting a day.....Its just right!

Not sure what his taste like. Mine isn't too sweet. I don't think so but I didn't follow the recipe. I make mine to point where its not too much of a clear but balanced out between two. Everyone likes it and keeps wanting more.
