Default Summer Sausage??

I would really like to try to make some jalapeno cheese summer sausage....Does anyone have a good recipe that they don't mind sharing....I know that some people don't give away their secrets and I respect that...But if anyone can help and break it down for me start to finish, I myself along with my 3 little boys would be thankful....I have never tried this so I need to know what I need and step by step what to do....Thanks

I have a really easy recipe at home. You don't even use a casing. I'll post it this evening for you.

I use the Hi Moutain kit from Academy $8.00 it will make 30#.....I smoke mine for better flavor....then finish it off in the oven....

Cabelas also sells the hi-mountain kits and i really like the recipe they use plus you get everything to make summer sausage except the meat. I like mine with jalapenos and cheese...
