Fall is coming. Little gloomy at work today so I thought about comfort type food all day.
Sixty degrees out and drizzling a little.
Came home and the lady had ground beef out. Of course you can make this with any type of beef, chicken or pork but I have ground beef to work with this evening.
Heat up your Dutch oven and toast about 1 T of coriander seed. Ground it up.
Next add some Manteca to the Dutch oven.
Brown your ground beef.
Strain the fat.
Leave a little fat in the Dutch oven and add one whole onion diced up and about three cloves of garlic minced. Sauté for a couple of minutes.
Add ground beef.
Dice 3 Roma tomato’s.
Cube about 5 small taters.
Add to Dutch oven along with coriander.
If you don’t have fresh Chile use this.
Add to Dutch oven.
Add about one T of oregano.
I add a little flour to thicken.
Add 3 cups of chicken stock.
Bring to a boil and simmer for about 45 minute or so.
