Favorite Fajita Marinade?

    Fiesta beef fajita spice and a little extra garlic powder is all I use. I season the meat and let it sit in a gallon baggie for as long as possible. Preferably 24hrs before cooking. I also trim off the excess sinew and fat.

      Ive been buying the pre-marinated steak at different meat markets around the area(mexican). Then tried to use the seasonin they sell to make my own. Not quite there but aint no slouch either

          I soak in pineapple juice overnight and then coat heavily with El Vanado red fajita seasoning.

            I mostly use this on beef but have used on chicken also. This recipe is my favorite. I also sometimes will add mango in place of one of the oranges. Another tip would be to make sure your meat is thin. Butterflying the chicken helps a lot in absorbing the flavor through the meat...

            4 Garlic Cloves, Minced
            1 Jalapeno, Minced
            1 Handful Cilantro Leaves, Finely Chopped
            ½ tsp Kosher Salt
            ½ tsp Fresh Ground Black Pepper
            ½ tsp Cumin
            2 Limes, Juiced
            2 Oranges, Juiced
            2 tbsp White Vinegar
            ¼ cup Olive Oil

            Mix all ingredients and marinade for 8-24 hours.

              I never have cooked chicken "fajitas" but for beer I just marinate in Italian dressing.

                I ended up going with the "Killer Fajita Marinade" it smells great, I'll let y'all know how it turns out! I'll end up trying every Marinade posted up before long. I finally found some mesquite chips to cook with since mesquite charcoal or mesquite trees aren't a thing out here. I guess I should put an order in to Cajun Blake as well!

                    Squeeze a bunch of limes all over the meat.
                    Pour hot Pace picante sauce over meat.
                    Let sit for a few hours.
                    Grill.

                        These are hard to beat. Love me some Lupe Tortilla Jajitas.
                        When we lived in Texas, our favorite restaurant BY FAR was Lupe Tortilla's. Here's a copycat recipe for their famous beef Fajitas Grandioso.
