i love to eat sandhill and prefer it to any waterfowl and to most cuts of venison. People that don't like it are probably cooking it wrong.
My personal favorite.
Cube meat and marinate in Italian dressing over night
grill in grill basket until medium with onions and bell peppers.
One of my favorite meals personally.

Since most wild birds can be easily overcooked, I would suggest braising the breasts in a white wine/thyme/rosemary/butter mixture, and serving with wild rice and ice cold chardonnay.
