    Stuffed Flounder

    I cooked this last night. Turned out really good.

    1 lb of shrimp
    1 lb of lump crabmeat
    celery
    onion
    bell pepper
    1 container of garlic bread crumbs
    flounder
    1 egg

    Cook the Cajun Trinity "bell pepper, onion, and celery in some butter."
    Put the shrimp and crabmeat in a pan with melted butter and some cajun seasoning. Cook till shrimp is cooked.
    Mix the Cajun Trinity and shrimp and crab together. Mix in about a cup or so of the bread crumbs. Add the egg. Mix all together.

    Cut the head off the flounder and butterfly the fish and stuffing. I baked it on 350 degrees then broiled on high for 5 minutes.

                Good stuff there - I bake mine for about 30 to 45 minutes, but check often to pull it as soon as the flesh begins to flake as to not dry it out. I baste with a minced garlic/butter/parsley sauce about every 15 minutes.

                  What ground level said on the baking. I basted mine with garlic, butter and cajun seasoning.
