I've heard really good things about Hank Shaw's Buck, Buck, Moose, but my personal hesitance is that his recipes often require rare ingredients and can be a bit time consuming.

Jeremiah from http://fromfieldtoplate.com/ doesn't have a cookbook yet (that I know of) but he also has some good, doable recipes on his website.

Would love to hear of any other books too.

Was given this book as a wedding gift, and there are some great recipes, as well as some "interesting" ones utilizing coon and possum.
