I've never done it with doves, but when we do high volume bbq chicken dinners for various benefits, there is a "greaser" station. A couple guys dunk their hands in a tub of mayo and rub down the chicken halves. Helps keep them a little more moist.
Mayo is almost nothing but oil to begin with. I use it on hamburger buns then grill them. The cooking takes the mayo flavor away and tastes like butter when cooked with other things.
