I usually sous vide them then sear on the grill. This one smoked with oak and pecan at 250-275 for 2.5 to 3 hrs till 133 inside then wrapped in foil and then a towel in the ice chest for an hr. It was tender and moist with a little smoke flavor. Will do this again this way.

I've never tires it any other way. I've heard that the East coast folks treat them like a brisket, but haven't tried it yet. I usually sous vide for 4-6 hours @ 130 then sear, and haven't had one turn out bad yet.
