    The French call the coot a "poule d'eau."

    Some Cajuns I know call them "pouldeau ducks" or "flying gizzards."

    I have had pouldeau slow cooked with white beans over rice. It was very good eating.

                      You couldnt post enough about snakes around the campfire.

                      Now you are asking about cooking some very questionable animals.

                        I am just trying make things fun and keep them going. Does this bother you? I hope not because that is not what it is meant to do. Why is it really funny about me answering back on the threads? Another thing, I don't believe that half of the posts are mine. Ok maybe on the strange recipes half of them are mine but not on the other. LOL. Also I have no story; other than I am doing something that I think is fun and neat.

                        PS Thank you for praying for my wife. I am very greatful. Thank you again. I hope you have a blessed day.

                          You are bringing up some very good posts and keeping them going well......nothing wrong there.

                          I am not on here a lot, but I had never seen you post on any of the threads I was posting/reading and was just wondering a little about you.

                          I do hope your daughter and wife are better. Nothing as scary as having a loved one sick and suffering. If she is back at work I am sure she is happy to see this cooler weather.

                            COUNTRY STYLE BEAVER RECIPE

                            2-3 lbs beaver steaks 1/2 inch thick
                            Bacon grease
                            2 cups flour
                            1 tsp salt
                            1 tsp pepper
                            2 medium onions
                            1 can cream of mushroom soup
                            1 can or 1/2 lb mushrooms

                            Combine flour, salt and pepper in a closable bag or 2 quart closable plastic container and shake until mixed. Add beaver and shake until well coated. Save remaining flour. Dice onions. Melt enough bacon grease in the bottom of a fry pan to sauté onions and beaver. Sauté onions and floured beaver in bacon grease, adding more grease as needed. Place beaver aside.

                            Combine soup and mushrooms in frying pan. Dissolve 2 to 3 heaping tbsp of seasoned flour in 2 cups cold water. Add to soup mix and simmer 5 minutes. Add beaver and onions to mix and simmer covered for 30 minutes.
