    Good wild hog recipe ?

    What's a good recipe to cook some wild hog in the oven?

    Take a section of the backstrap and marinade it in Italian dressing for 4-6 hours. Take it out and then roll it in a mixture of garlic salt and black pepper. I do it on the grill but the oven would work too

      I have done pretty well with picking my favorite rub and covering the meat then smoking it for 2 hours.

        Butterfly backstrap, stuff with your choice of boudin, roll up and tie with cookin twine. marinate in your choice of sauce for 4-6 hours, bake in oven.
        serve with beer.

            I brine (if time permits), season, and smoke. Nothing more. Carve off the pit with warm corn tortillas and pico

              Green Chili Stew in a crock pot 8+ hours. Below is the recipe I use...we usually eat it over rice.


              2 tablespoons vegetable oil
              3 pounds boneless pork shoulder (diced)
              add kosher salt
              1 large white onion (diced)
              1 ½ cups Anaheim chile peppers (or diced Hatch)
              1 small green bell pepper (diced)
              1 small red bell pepper (diced)
              4 cloves garlic (minced)
              4 cups low-sodium chicken broth
              1 pound yukon gold potatoes (peeled and diced)
              2 15-ounces cans white hominy (drained and rinsed)
              1 large bunch cilantro (leaves chopped)
              2 tablespoons cornstarch

                  Carnitas in a crockpot

                  season to taste, put in crockpot add 1 cup of coke or dr pepper, cook on low for 8 hours flipping once halfway through, shred up meat lay on cookie pan add some juice from crockpot to keep moist. toss in oven on high broil for 10 min, flip around and add more juice repeat for another 10 min. the broil step is to crispin it up alil bit. serve on hot tortillas with what ever fixins you choose.

                          Throw wild hog in the dumpster and goto favorite BBQ restaurant. lol

                            We made schnitzel out of the backstrap or loin.
                            Slice about 1/2 inch wide or so
                            Pound out flat with a mallet, dredge in flour then egg wash then bread crumbs. Pan fry
                            In oil till golden brown on each side nice and crispy. Makes a good sammitch also.
