Off shore, venice

Looking at first off shore trip. I am thinking tuna. I heard some people put out bait, hook fish, then hand you the pole. Then rotates to next person with each bite. This isn't all that appealing to me, but I've never been. It's sounds boring for amount of money offshore trips cost. Are all charter trips designed around this model? I was looking at voodoo charters, and haven't clarified this with them yet.
Any tips/charters ideas, etc are welcome.
