    Cheese is on.

    I put 12 pounds of cheddar cheese on the cold smoker about an hour ago an gonna sit back an let it roll. I will probably pull it off around 10 or 11 tonight. Im ready for some snacks an my family is ready to take them some home. This stuff is amazing with a cracker and summer sausage.

            Smoked cheese is amazing, it adds a wood fire smoke to it without melting it. Your sir are missing out.

              I built a cold smoker with a separate wood cooking box. Smart on here built a nice setup on here several years ago that I mimicked mine off of.

                      Gave them a turn. The fire got a little hot an a couple chunks melted a smidge. All.is well now, the wind had laid down an they are happy.

                            I keep the temp as far down as possible, basically ambient air temp. Six hours will give a smoke flavor all the way through on my box.
