    Enchilada Casserole

    This is so good and so easy.

    1 baked chichen boned or 1 lb of ground venison with onions
    1 can Goya refried pinto beans with chipotle
    1 can enchilada Sauce Medium (I used Hill Country is is .89 cents)
    1 small can of diced chili's mild or 1 can of Ro Tel use one or the other



    flour tortilla's I use the large ones
    lots of cheese, I prefer mexican mix cheese

    2 8x8 pyrex glass baking dish's

    Mix beans and chili's or rotel

    pour enchilada sauce in a large bowl

    spray cooking dish with cooking oil

    put 1 large tortilla in enchilada sauce.. make sure it is all coated. large should almost fill to bottom of the dish.

    put in bottom of dish

    top with a layer of bean mix

    top with chicken

    top with lots of cheese

    add one more layer just like above

    top with lots of cheese

    pour the extra enchilada sauce over the top.

    bake at 350 for about 30 minutes of so..... make sure all the cheese is melded.

    I top with pico de gallo... but I bet sour cream would be good also..

    So easy and so good. It is even better the next day. There are no added spices as the beans and chili;s or rotel add everthing that is needed.





    I made two of these today.. sent one to work with my sweetheart to share. As soon as the other one comes out I will post another picture of what it loook like on the dish....

            I was wondering how long it was going to take you to post that recipe on here. Guys and gals it is very good i have had 2 plates of it before.
