After trying many different ways to cook wild turkey, the only way I do it now is to slice the breast into strips, soak in buttermilk, roll in seasoned flour and breadcrumbs then fry with a side of cream gravy. I have never found a way to make the legs edible.

Brine the breast in your favorite brine mixture. I use water, salt, garlic, rosemary, siracha, bay leaves and a hunt of Worcestershire.
The next day rub some brown sugar on the top of the breast and lightly sprinkle Head Country seasoning (you can use whatever seasoning you like). Put on the smoker for 2-3 hrs at 225. I like to use pecan or mesquite for my turkey.
Slice the breast and eat it on a sandwhich or by itself!
This is what I do
Cut breasts into strips. Like all meat it's easier to cut when semi frozen
Brine for 24hrs in water with salt added and Tony's/ragin blaze/slap yo momma
I buy whatever cheap chicken fry mix looks best
My secret ingredient is to crush up a sleeve or two of gram crackers and use this as a 50/50 mix for the batter
Dip in egg then the fry mix and cook in hot oil
It's real good and stays very moist if not left over cooked.
How Bout a whole wild bird? Anyone ever smoked one? I've roasted them but would like to try smoking one? Worth the time and effort or just fry as normal??
